Goji Berry Cookies & other health boosting recipes

In China they like to eat their Goji Berries raw….plucked straight off the goji berry bush and straight down the hatch is the preferred method of the East.
So what are Goji Berries?
The Wilderness Family Naturals website summed it up best “Goji Berries are gathered from plants growing in the mountains of Tibet. They are wild-grown, and wild-harvested. They are also certified organic by Integrity Services, International (ISI). The berries are dried naturally by the sun. They are not fumigated, sweetened, or adulterated in anyway.”
Why are Goji Berries good for us?
Goji Berries have long played important roles in traditional Chinese medicine (TCM) where they are believed to enhance immune system function, improve eyesight, protect the liver, boost sperm production and improve circulation, among other effects.
Now that we know what Golgi berries are and why they’re good for us, let’s have a look at a couple of recipes we can whip up at home to keep the family nice and healthy:
The first recipe comes from naturopathiccenter.com and is a immune boosting tea that you can make at home to drink during the winter months. The astragalus and goji berries can be found at your local Chinese herbal shop.
Ingredients
Astralagus (huang qi). 5 sticks. These look like tongue depressors.
Fresh ginger- 1 slice
2 tablespoons goji berries (Chinese wolfberry)
Instructions
1) Fill a medium pot 80% full and bring to a boil
2) Add astagalus, golgi berries, and ginger. Be sure to wash the ingredients first to get rid of dust prior to boiling.
3) Reduce to a medium setting and let boil for 25 minutes.
4) Sip warm throughout the day.
Optional: To treat dry sore throats, add a pinch of sea salt to your cup. Sea salt contains a wide range of trace minerals your body needs to keep you well hydrated.

Apricot Goji Berry Oatmeal
Great for Lasting Energy
- 3 c. water
- 1/2 c. frozen (unsweetened) apple juice concentrate, thawed
- 1/2 c. dried apricots, chopped finely
- 1/4 c. dried Goji Berries or wolfberries
- 1 1/2 c. old fashioned or quick cooking rolled oats
- Bring water and apple juice concentrate to a boil. Add oats, apricots, and Golgi berries or wolfberries; simmer until most of the liquid is absorbed. Remove from heat and cover; let stand for 5 minutes before serving.Makes 2 servings
Goji Berry Granola Snack
Perfect for a Sustained Immune Defense
- 3 c. 6-grain flakes, multigrain flakes or muesli
- 1 c. unsweetened shredded coconut
- 1/2 c. brown rice flour
- 1/2 c. whole oat flour
- 1/2 c. Golgi berries or wolfberries, dried
- 1/2 c. raw cashew pieces
- 1/2 c. chopped raw pecans
- 2 tsp. ground cinnamon
- 1/2 tsp. xanthan gum
- 1/4 tsp. baking soda
- 1/4 tsp. baking powder
- small pinch freshly grated nutmeg
- 1/3 c. + 1 Tbs. organic Blue Agave
- 1 cube + 2 Tbs. organic butter
- 2 generous Tbs. organic honey
- 3 Tbs. soy milk
- Preheat oven to 300 degrees. Combine all dry ingredients in the bowl of an electric mixer with paddle attachment. Combine wet ingredients in a small saucepan and heat on low, stirring often, until butter is completely melted. Then, pour heated wet ingredients over dry and mix on low speed until well combined.Spread into a large, lightly oiled, jellyroll pan to about a centimeter in height. Bake for 15 minutes or until golden brown over all. Let cool completely. Break into bite size pieces.
