This is a recipe served up regularly at our house. The best thing about it is it’s so quick and easy……and it good for you.
Ingredients
4-6 Chicken thighs or breasts, skinned
1 tin reduced salt tomato soup
Mushrooms, diced
Capsicum, diced,
Onion, sliced,
1 tin of diced tomatoes
Mixed Herbs, pepper, cinnamon
Pasta
Cooking Instructions
Put all ingredients into a saucepan or slow cooker and cook on low-medium heat for 1-1.5hrs. You will need to stir regularly so that the bottom doesn’t burn.. Preheat oven to 180 deg C.
When it is almost cooked, put on some pasta to cook. This can be spaghetti, fettuccine or even spiral pasta… I prefer whole meal.
Once the chicken has cooked, remove the pieces from the sauce and place on a tray and put into the oven at 180 deg C for 15 minutes so that the sauce that has stuck to the side of the chicken gives a nice skin on the outside (be careful not to dry out the chicken).
When the pasta is cooked add it to the sauce. And mix. Make up your favourite side salad and serve the Chicken thighs on top of the pasta and sauce combo with the salad on the side.
(Please note: this recipe might not be suitable for people with Crohns Disease or requiring low residue or low chemical diets).
